Roasted Beet Salad with Apple and Celery

Serves 4-6


1lb beets, peeled

¼ cup olive oil

1 tsp sea salt

2 apples peeled, quartered, and thinly sliced

2tablespoons minced shallots

2 celery stalks, sliced on diagonal

2 tablespoons freshly chopped dill

1 tablespoon fresh lemon juice

1 tablespoon balsamic vinegar

1 tablespoon extra virgin olive oil

¼ teaspoon sea salt

Freshly ground black pepper



  1. Preheat oven to 400F
  2. In a bowl, toss beets with olive oil and sea salt and spread on a baking sheet lined with parchment paper. Roast in the oven for 20 minutes or until fork tender. Let cool. Add the apple, shallot, celery and dill.
  3. Stir in the lemon juice, vinegar, oil, salt and pepper.
  4. Let this sit for at least 20 minutes to allow the flavors to marinade
